Why Copper?
Copper's classic kitchen bonafides come from the material's reaction with raw eggs, basic chemistry with a culinary bonus.
When you whisk egg whites in a copper bowl, some of the copper ions detach from the bowl and bond with a protein in the egg whites called conalbumin. This forms a strong, stable conalbumin-copper complex that delays any tendency in the expanding egg foam to deflate.
Whisking mixes air with the egg, creating bubbles that expand the volume of the liquid up to eight times as the egg protein uncoils and stretches. The more the protein stretches, the stiffer the beaten egg foam up to stiff, peaky points.

About Made in the USA: Sertodo maintains a craft workshop studio in East Austin, where owner Jonathan Beall collaborates with artisans to design new pieces, refine ergonomics (like patented handle styles), and oversee quality before shipping worldwide.

Care
Care
Wash and immediately dry your copper items after use to prevent spotting! When not dried immediately, spotting can occur due to the trace amounts of chemicals in your tap water that can cause a reaction with the copper. Some people don't mind this spotting; they will actually let it build up on the cup over time into a matte patina finish that many folks find appealing. If you prefer the original bright shine from when you first got your Sertodo Copper hand hammered products, don't worry! You can easily return them to that original condition with a quick polish.
